We are an organic certified coffee roaster. We have been roasting coffee in Ithaca, NY since 1982. Our roasts are profile roasted to expose the unique flavors and aromas inherent, and to develop sweetness. We strive to maintain a clean, balanced acidity while minimizing the impact of the roast. 

Grown in southern Mexico. Soft, honeyed acidity. Light, juicy body. Flavors of strawberry and stone fruit.

2024 WINTRY MIX

The region of Ayarza is a special one, landmarked by the drastic landscape and cold blue water from the Laguna de Ayarza and Laguna Azul. The lake was formed by two massive volcanos that collapsed and formed a large crater. The legends surrounding this lake are numerous, like the one that says the bottom has never been found, or the large white rock that resembles a petrified woman who didn’t follow the orders of Jesus.
For this Blue Ayarza Natural coffee, farmers deliver the best cherries from the region to our mill, often in their very own pickup trucks. These cherries are then sent to Amatitilan to dry on the patio for 10 days, and are finished off in a mechanical drier for 5-10 more hours.

An atypical Indonesian coffee. Sweet orange juice acidity and sumptuous body. Flavors of chocolate, vanilla, caramel.

We begin by sourcing the most socially-impactful, highest-quality coffee beans we can, roasting them with scientific care (in state-of-the-art 15-kilo and 10-kilo drum roasters, by PhD and MD holders), and packaging and shipping them as soon as they are roasted. We only roast on order (no coffee inventory ever!) so we can always ship your coffee just hours after roasting. 

Yet, our definition of coffee "greatness" goes well beyond high quality and unparalleled freshness - it prioritizes the impact behind each bean. In fact, our passion for coffee is only surpassed by our desire to make a difference in the lives of small coffee farmers (over wealthy large farmers or Estates which tend to dominate Specialty coffee). Our biggest success story is a small farmer Co-Op in Poaquil, Guatemala, which was able to buy their own coffee processing equipment in 2019 and continues to grow with us!
