We are often asked how we came up with the name Noble Coyote. Ethical trade and sustainability are very important to us. In the coffee world, a "coyote" is a middleman who purchases coffee from farmers. In a commodity market, coyotes buy low and sell high, to the detriment of the farmers who grow the coffee. We try to purchase coffee from importers who not only compensate farmers fairly, but invest in those farmers in order to improve their lives.

NOBLE COYOTES ARE MIDDLEMEN WHO AID, SUPPORT, AND INVEST IN THE FARMERS WHO SUPPLY THEM. AS A COFFEE ROASTER PURCHASING GREEN COFFEE, WE STRIVE TO BE NOBLE COYOTES BY SUPPORTING FARMERS AND IMPORTERS WHO PRACTICE THESE VALUES.

We also pursue noble practices in our day-to-day business and operations. We support environmental sustainability through donating our roasting by-products to local farmers (i.e. coffee grounds for compost, bean chaff, burlap bags). We use 100% wind energy at the roastery. Participating in community organizations and events is also important to us. We are thankful to have the opportunity to work closely with amazing local programs that invest in people.

The La Chilana farm is located in the Chiapas region, bordering Guatemala in the southern part of Mexico.

Gora Kone washing station is located near the Nensebo river, in a village named Worka.

Aricha coffee exhibits a complex profile with floral notes and occasional hints of citrus. 

Ethiopia Aricha

Amidst the breathtaking Yirgacheffe highlands in southern Ethiopia, the Aricha washing station produces coffees as vibrant as the landscape. Ethiopia Yirgacheffe Aricha immediately grabbed our attention because of its clean flavor profile and bright citrus notes.  The Aricha washing station works with nearly 700 smallholder farmers who contribute to the harvest. Coffee farms in the area are 1,925 meters above sea level, and coffee cherries are meticulously hand picked at peak ripeness from November to January. Within 12 hours of harvesting, the cherries are depulped and washed with spring water to be dried on raised beds.
This coffee is lively, and sweet. Look for notes of black tea, lemon bars, shortbread, and honey.

We begin by sourcing the most socially-impactful, highest-quality coffee beans we can, roasting them with scientific care (in state-of-the-art 15-kilo and 10-kilo drum roasters, by PhD and MD holders), and packaging and shipping them as soon as they are roasted. We only roast on order (no coffee inventory ever!) so we can always ship your coffee just hours after roasting. 

Yet, our definition of coffee "greatness" goes well beyond high quality and unparalleled freshness - it prioritizes the impact behind each bean. In fact, our passion for coffee is only surpassed by our desire to make a difference in the lives of small coffee farmers (over wealthy large farmers or Estates which tend to dominate Specialty coffee). Our biggest success story is a small farmer Co-Op in Poaquil, Guatemala, which was able to buy their own coffee processing equipment in 2019 and continues to grow with us!
