Carolina Villalobos and her husband Rolando are a coffee producing team in Colonia Siete Estrellas (Seven Stars). Carolina has been growing coffee since she was a little girl (over 30 years ago). She started out working with her parents until 2010 when her and Rolando decided to buy their own lot and become independent.

This is our 5th year sourcing coffee from Carolina. Her production has increased to 3,500 lb from 1,400 lb 5 years ago. Early in 2021 we committed to over 500 lb before the current crop blossomed. It has finally arrived and we are very excited to share this wonderful coffee with you.

They are most proud of their coffee quality and their efforts to improve quality every year. Their biggest improvement in the coffee production process is: to pick only ripe (red) cherries and dry the coffee in raised beds, instead of on the "cachis" (floor mats). Thanks to our direct trade partner's technical assistance, they have bought a de-pulping machine (before it was all done by hand) and they have learned how to prune and fertilize their trees.

We believe that no amount of roasting expertise or beverage mixology can take the place of the kind of green coffee that’s the result of intentionality at the farm level. Coffees that are grown and harvested to maintain quality and consistency from cherry ripeness to density then processed to continue that quality create a coffee that is clean, flavorful and interesting from cup to cup. Our commitment to seeking out quality green coffee ranges from trips to origin were Jon, part owner, and green buyer, cups hundreds of coffees in search of the one or two that fits what we are looking for. We roast and cup dozens of coffee samples a week - narrowing them down to coffees that taste great as an espresso, pallets of lots designed to make up our Southern Weather house blend, and single bags of coffee we vac-pac and sell in small releases.

In addition to maintaining regular communication, we also plan trips to visit our partners in their farms, processing facilities, and offices, and meet with folks throughout the supply stream that help bring coffees to our roastery.

We work closely with our partners to carefully source coffees that highlight the unique flavor profiles coffee producing regions have to offer.
