Notes from the curator

This microlot was a participant in the Inza Cup competition also known as Concurso de cafes de alta calidad: Inza-Cauca, Colombia. This delicious coffee is produced by Milton Servo Volveras Poche owner of the farm he calls El Triunfo. 2 hectares of land it's been enough to grow about 7,000 trees of Castillo varietal. The coffee is picked ripe and depulped before undergoing fermentation for about 22 hours. It's then washed and dried under parabolic driers for 10 days.
