The fully washed processed coffee from Yirgacheffe Kochere is famous for its fruity floral features. Close attention when roasting was required, as overdoing it would burn away these delicate aromas and flavors. It was important for me to discover the perfect dropping point when developing its profile. Care and consideration was my number one factor.

Definitely a standard Ethiopian beans. Standard is not a bad thing here. Very solid, bright, citrus, jasmine tea-like taste. Very consistent, light-bodied. Acidity is medium. Cupping this at 84.
