Notes from the curator
Valerian (our founding roaster) is originally from the old continent and he has a very hard time to find good espresso in the USA. The modern espresso has too much acidity and the old USA school roasts the coffee too dark and it tastes ashy. Also, where is the silky mouthfeel? Unhappy with available espresso in the states, Valerian started to develop a roast profile which will remind him of his times in cafes in Europe watching the fast passing world, while sipping rich chocolaty espresso.
