In the southwest corner of Honduras, hard on the borders of Guatemala and El Salvador, we find the Ocotepeque region. Here mountains are cloud-shrouded, volcanic soils lend their coffee-friendly nutrients, and microclimate coax the best out of the beans.
Specialty grade coffee in Honduras has traveled a long and difficult road. In 1998, just as a small number of coffee farmers and exporters were finding their way into the American specialty coffee market, Honduras was devastated first by hurricane Mitch, and then by the storms and floods of 1999.
In addition, most of the country’s coffee is produced by smallholders. Lack of infrastructure means many process and dry their coffee themselves and mix these small lots together to sell to exporters. It sounds neighborly, but the results can be disappointing. However, this scenario is changing, bringing an explosion of quality coffees from Honduras to coffee lovers worldwide.

Theodore’s Coffee Roasters has a cool backstory that can’t be passed up… Theodore’s was started in 2014 by Darwin Pavon. Darwin was born in Honduras and was lucky enough to find himself one of the original boys in a program called the Micah Project. The Micah Project teaches young men and boys in poverty in Tegucigalpa, Honduras leadership and life skills. This led to Darwin becoming involved in a fertilizer development project where he was collecting soil samples and, my guess is that led to the world of coffee. Fast forward to 2014 and he started a coffee roastery and tasting room in Owosso, Michigan, about midway between Flint and Lansing.
Now the new home is Zeeland Michigan right between Holland and Grand Rapids!

Theodore’s is sourced through direct trade, a result of Theodore’s founder Darwin Pavon’s relationship with farmers throughout Central America and, more recently, Africa.
Through direct trade, Theodore’s ensures that their farmers are paid a fair amount for their coffee and support Micah Project.
