In Honduras, a flat area in the middle of high mountains is called Las Joyas. Our 60-acre farm gets its name from an area of about 4 acres, otherwise, we’re surrounded by mountains. At the time of purchase, it had sat untouched for 14 years. This gave my soil really high readings of Organic Matter when tested. This, combined with the high altitude, being right beside a microbasin, and having a very big ecosystem all around was what made us pull the trigger on the purchase of this property. Our coffee is harvested from January thru April. It’s then dried and rested all of May. Our first export is in June and the second in August. All coffee rests a minimum of 2 months in parchment. We employ about 10 people, each having their own family of 5-7 members. Meaning at least 60 people are fed all year long from salaries paid at the farm.
