We pioneered the art of "high altitude" roasting. Coffee is grown at elevations between 2,000-4,000 feet but always roasted at much lower heights thus causing longer roasting times & higher temperatures making your coffee more bitter & acidic. We roast ours at altitude allowing us to use lower temps & shorter roasting times resulting is a less bitter coffee that stays fresh longer.
