Keramo, high in the beautiful Bombe mountains in Bensa, Sidama, is so remote that the area does not have its own central washing station, so producers bring their cherries to neighboring washing stations for processing, which results in some fun crossovers with other local districts. Years back, all the coffees from the Keramo village were sold under the name of the neighboring village, Shantawene (itself an area that produces amazing coffee). As the variety in flavor began to be differentiated between the villages, producers began to value isolation in the lots, which continues today. This is how Keramo coffees have been introduced to the coffee-drinking world, and have become very successful. These coffees continue to stand out as a team favorite on the cupping table. It is a dense coffee, with heavy concentrations of the smaller screen sizes, which is highly unusual and reflects the higher elevations where the coffee is grown.

Roasting coffee was originally an escape fantasy/retirement dream for owner Sam LaRobardiere, until roasting equipment and some green coffee basically fell into his lap. Then as a hobby roaster, he began selling at a pop-up for community events and artisan markets, and in 2018 took the leap to open both a roastery and coffee shop. 

Over the years, the folks at Theory Coffee Roasters have honed their coffee skills and built strong coffee-sourcing relationships. Along the way, they have had some fun achievements. While Theory is motivated by the great accomplishments of the past, we continue to be even more excited about the future.
