Back in the days of sailing ships, India coffee was transported in moisture laden holds of wooden vessels for months long voyages. The prolonged exposure to sea air mellowed the appearance and flavor of the beans. To reproduce this effect today, coffee is stored in ventilated Indian port warehouses exposed to humid Arabian Sea monsoon season winds. Kents and Cauvery varietals grown at 1,220 meters, monsooned and roasted into the dark medium range provides a dense, creamy, earthy cup with hints of bakers chocolate and sandalwood.
