Roasting coffee was originally an escape fantasy/retirement dream for owner Sam LaRobardiere, until roasting equipment and some green coffee basically fell into his lap. Then as a hobby roaster, he began selling at a pop-up for community events and artisan markets, and in 2018 took the leap to open both a roastery and coffee shop. 

Over the years, the folks at Theory Coffee Roasters have honed their coffee skills and built strong coffee-sourcing relationships. Along the way, they have had some fun achievements. While Theory is motivated by the great accomplishments of the past, we continue to be even more excited about the future. Mexico - La Yerba (Natural)

The town of La Yerba is a small community on the northern side of the San Juan Volcano. The community was originally founded under the name of El Astal, but in 1969 the town was relocated to border a highway as a newly formed Ejido and was named La Yerba. To this day the community remains integrated by 35 Ejidatarios with a total of 786 inhabitants; 383 women and 403 men, according to the census of INEGI, 2013. The economy of La Yerba is tied to its two most important crops, coffee, and avocados. With one harvest immediately following the other, there are only a few months a year where farmers have guaranteed income. By working with San Cristobal and CAFESUMEX, farmers receive a price adjustment based on the quality and sale price 4 to 6 months after the harvest of their coffee, in addition to the price they receive for their coffee in cherry form.

      As a newly formed society, ASTAL has not had the chance to build a wet mill. The coffee they produce is instead processed as a dried natural. Instead of removing the pulp and mucilage from the coffee cherries, the coffee is only rinsed off then immediately set out to dry while still in cherry form. This process is very similar to drying a grape into a raisin. By allowing the coffee to dry as whole cherries, many flavors and characteristics are imparted onto the coffee bean. Naturally processed coffees are known to have a heavier mouthfeel, lower acidity, and distinct fruity characteristics. Ms. Andrea Flores De La O, the president of ASTAL, provides a system of premiums for coffee produced by women, which has enabled the society’s eight female members to get their coffee to market. La Yerba Womens Afrutado is one of those coffees.

Guatemala - Rosma (Washed)

In 1963, Don Alejandro Morales purchased the farm with old Bourbon and Typica trees. In 1980, his son, Dr. Fredy Morales, took over the plantation and, in honor of his wife, named the farm ROSMA after Rose Mary. At that time, there was no road to the farm, requiring everything to be transported on mules, which involved walking for around an hour. With the help of community leaders from the Caserío Buena Vista, they built a road to the farm, greatly benefiting the entire community.
Another significant achievement of Finca Rosma was bringing fresh spring water through a pipeline, which is 5 kilometers away from the farm. Due to the topography of the land, processing coffee was challenging. It took considerable effort to build the facilities necessary for coffee production. Today, the Coffee Mill has become a highlight of the property, featuring an ecological wet mill that processes high-quality coffee.

Colombia - El Puente (Natural)

The El Puente processing facility is located in Fundador township, Palestina, Huila, Colombia. “El Puente” translates to “the bridge”, named not only for the footbridge that spans a nearby river, but more importantly representing the connection that the processing facility creates between local smallholder producers and the global specialty coffee industry. The facility is just a 20 minute drive to the coffee centers of Pitalito and downtown Palestina, and is strategically located in an area with a high density of coffee to allow easy delivery of cherries by local coffee producers.
The facility is supported by community investment in the sustainable development of rural areas and is part of a social impact project started by Clearpath Coffee in 2018 with the goal of addressing common problems faced by smallholder coffee producers in the region.

Santa Elena, La Paz, Honduras, is renowned for its high-altitude coffee farms, rich volcanic soil, and ideal climate for producing specialty coffee. Farmers in this region, supported by initiatives like Catracha Coffee Company, focus on sustainable practices and meticulous processing methods such as honey and washed processes. These coffees are celebrated for their vibrant flavors, often featuring notes of sweetness, fruit, and a balanced acidity, reflecting the care and dedication of the local producers.

This honey-processed coffee from Dinora Benitez in Santa Elena is grown at 1,650 MASL and showcases the dedication to quality and sustainability that defines Catracha Coffee. With its unique honey processing method, this coffee delivers a sweet, complex flavor profile that reflects the care and expertise of its producer.
Catracha Coffee, founded by Mayra Orellana-Powell, connects coffee farmers with roasters through a profit-sharing model that ensures farmers earn at least $2.00 per pound. This extra income enables producers like Dinora to reinvest in their farms and improve their standard of living over time.
Additionally, proceeds from Catracha Coffee support Catracha Community, a nonprofit that invests in local projects, including art programs for children, gardening initiatives, and reforestation efforts. These projects uplift the entire Santa Elena community while preserving the environment.

It's also coffee grinder friendly as a result.  You will also notice a more smooth, and less bitter flavor profile in our flavored coffee.
